Freeze-dried fruits from Germany
Most of the fruits are preserved with the freeze-drying technology. Freeze-drying (or lyophilization) is a dehydration process during which the product is frozen first, then, with the surrounding pressure reduced, heat is added very slowly in order to allow the frozen water in the material to “disappear”. More precisely, the ice is allowed to sublimate directly from the solid phase to the gas phase, avoiding the liquid phase.
Chocolate and wine
They are exciting gastronomical products already on their own, each one separately provides the taste buds with hundreds of aromatic components. What happens if we
match these two products? chocoMe made different chocolate creations with the help of a renowned wine sommelier: these creations have special toppings with matching flavors to suit the given type of wine.
Our edible flowers from France
The flowers are collected during the winter and the beginning of spring. After the stem is removed and the flowers are washed, they are dried. They are then soaked in a sugar syrup and the magic takes place. At the end of their bath they are powdered with sugar freezes, to form a carapace and layed out to dry. They are then dehydrated. In order to be preserved yearlong, the flowers are stored safe from moisture. Then progressively with the needs, one regularly takes part of the violets dehydrated to soak them in a sugar syrup at very high temperature.
Before tasting our chocolate
Before tasting, it is advisable to keep the chocolate at room temperature for a little while if it was stored in a cooler place earlier. The optimal temperature for consumption is around 20 °C. After you have opened the package, carefully examine
the surface of the chocolate bar! It should be shining and somewhat glossy. Then check the scent! You should be able to smell the fragrance of pure chocolate, mixed with the scent of your chosen toppings.
